70% Montepulciano and 30% Sangiovese
70% Montepulciano and 30% Sangiovese: Produced from the estate's oldest vineyards using certified organic farming methods. It is intended as a "Riserva" style wine, though not always labeled as such, designed for long aging (10–15 years).
The grapes are destemmed and crushed. Fermentation takes place in large oak vats (tini) using indigenous yeasts. Aging (The Core Phase): This is where the wine gains its complexity. It is aged for 18 to 24 months (sometimes up to 30) in large Slavonian oak barrels (25–40 hl). Unlike small barriques, these large barrels allow the wine to breathe and evolve without being overwhelmed by "toasty" wood flavors. Refinement: After bottling, the wine rests for at least 6 months in the cellar before being released to the market.
