The grapes are selected hand by hand in September, placed in 6 Kg trunks and left to rest in our fruit-room. During the drying period, a sequence of biochemical processes, as the Botritis Nobile, partially transform sugars into glycerine. After crushing the grapes, the maceration and fermentation processes let the Amarone Biologico be a very structured and incredibly aromatic wine. 2 years of ageing in oak barrels give a distinctive personality to this Amarone.
